On Oct. 12, HK Wallace, cofounder of Abbott & Wallace, will leave Colorado with his family for a change of scenery.
In 2015, HK and John Abbott Young, best friends since middle school, moved to Longmont to make grain-to-glass whiskey. HK was the heart behind it all. He even learned how to build copper stills, which we still use today.
HK will always be the heart and soul of Abbott & Wallace. We’ll miss him deeply, but are so damn proud of his contribution. Lucky for us, he’ll continue to be a part of the conversations and decision-making going forward. Just a little farther away.
In Longmont, HK’s spirit will stay alive in more ways than one. For our fall menu, we’ll switch out the Gin and Tonic and Old Fashioned Menu for an HK-inspired section. We’re also releasing a Wallace Malt Whisky for the holidays.
